Balsamic glaze preparation: place a pan over the high heat; when hot, add the frozen berries, the balsamic vinegar and the brown sugar. With a spatula, stir softly the fruits, in order not to break them.
Cook down to obtain a caramelized texture, until the reduction has lost some of the vinegar taste.
Peel the mango and cut it into cubes.
Place the glazed berries inside the bottom of a glass bowl, add first the lettuce mix, and second the diced mango.
Decorate with the previously boiled prawns and some salt flakes; add some extra virgin olive oil and the Cocktail & Cava Sauce Valle del Orce.
