PRAWN COCKTAIL VALLE DEL ORCE
CÓCTEL DE GAMBAS AL ESTILO VALLE DEL ORCE

INGREDIENTS (4 personas)

  • Peeled large prawns 12 pieces
  • Lettuce mix 120 g.
  • Mango 2 pieces, frozen berries 300 g.
  • Balsamic vinegar 100 ml., brown sugar 50 g., extra virgin olive oil, sea salt flakes
  • Cocktail & Cava Sauce Valle del Orce

PREPARATION

Balsamic glaze preparation: place a pan over the high heat; when hot, add the frozen berries, the balsamic vinegar and the brown sugar. With a spatula, stir softly the fruits, in order not to break them.
Cook down to obtain a caramelized texture, until the reduction has lost some of the vinegar taste.

Peel the mango and cut it into cubes.

Place the glazed berries inside the bottom of a glass bowl, add first the lettuce mix, and second the diced mango.

Decorate with the previously boiled prawns and some salt flakes; add some extra virgin olive oil and the Cocktail & Cava Sauce Valle del Orce.
