GRILLED VEGETABLES WRAP WITH ANCHOVY SAUCE
ATADILLO DE VERDURAS CON SALSA DE ANCHOAS

INGREDIENTS (4 personas)

  • Carrots 2 pieces
  • Zucchini 2 pieces, leek 1 piece, eggplant 1 piece
  • white cabbage ¼ of a medium size piece, green beans 200g
  • Sesame oil, salt
  • Anchovy Sauce Valle del Orce

PREPARATION

Peel in stripes 2 large zucchinis in order to obtain 16 plane strips as thin as possible (about 3 cm. wide each) and set them apart.

Place 4 zucchini strips on a flat surface, crossing them by pairs. Do the same with the 3 others.

In the middle of the cross we’ve created, place the vegetables, previously cut into julienne and sautéed in sesame oil.

Close the stripes crossing them by pairs in order to wrap the inside vegetables, and grill to cook the outside stripes. Place the 4 wraps on plates and serve with Anchovy Sauce Valle del Orce.
